The maquis is the main form of vegetation in Corsica. You can find many aromatic wild herbs used in cooking. This terrine is unctuous and is best savoured with on crackers or fresh bread as an appetizer. You can even consider having it in the morning with toasts.

Ingredients

Pork, pork livers, eggs, water, french gray shallots, cornstarch, water, brandy, salt, maquis herbs (thyme, marjoram, nepeta, rosemary, myrtle), pepper.

Can be stored in the pantry for 2 years before opening. Refrigerate after opening. It can be kept for 7 days after opening.
