Cap Corse Muscat is a natural sweet wine produced in the northern tip of Corsica, it brings floral and fruity notes to foie gras. Then Muscat gives a little fruity and floral taste to the mousse, it is creamy and unctuous. It can be enjoyed as an appetizer. The mousse can be served on bread, a brioche or crackers, it goes very well with Pear and Fig Jam or with the Melon Muscat Jam. It can be served with a white wine or a sweet wine.

Ingredients

Duck liver, milk 2%, cream 15% (milk, cream, carboxymethylcellulose, guar gum, caroub gum, mono and diglycderides, carrageenan), poultry liver, muscat wine (sulfites), eggs, cornstarch, duck fat filtred, gelatin, salt, sugar, pepper.
