This month, I have concocted a recipe with a condiment that I particularly like, mustard!

This little Quebec gem will delight fine gourmets. This strong mustard but full of delicacy, contains wild mushrooms such as chanterelles, boletus, trumpets. It has everything to titillate your taste buds!

The recipe that I propose is about green, earth colour and pleasure.
Green is both about mental and physical cleansing, but also vitality and communication that tonight will be complete and zen. It also refers to Nature, to the forest. A subtle reminder of the ingredients on your plate.
Earthy colours bring back anchorage, which is the basis for balance. Return to our point of stability, deeply anchored in the ground. Feet in the soil, where we find at ground level, the food of the forest but also ours with many varieties of mushrooms. This wonderful fructification, which allows to feed both the micro and the macrocosm. The touch of yellow is delicately added to fuel the joy and highlight the exquisite dishes that are offered to us.
Here is my recipe, simple, fully healthy and full of flavours.

This frugal but nutritious meal will make you think of this exquisite Monk's Mustard. And you will remember this rustic and easy dish, in your daily culinary life, as a ritual, as a bubble to enjoy the moment away from the world or by sharing it with your tribe.
The Monk’s Sandwich

- 1 beautiful slice of bread of your choice
- 1 handful of arugula
- 2 tablespoons of fauxmage with dried tomatoes and basil
- 1 tablespoon of Monk's Mustard
- 1 branch of rosemary
- Spread the mustard on your slice of bread.
- Add the fauxmage.
- Sprinkle with arugula and drop some rosemary needles.
Goes with your kale chips! And that's all!
You just have to sit back and enjoy the moment, simply.
