Summer, bbq, dinners outside, good weather ... life is just great!

Nothing could be easier than putting a piece of meat, chicken, fish or seafood on the grill. Even if bbq is very simple, we often feel like exploring new flavours to enhance our meals, and above all, to enjoy the season of fresh herbs from the garden.

Summer marinade 

Here are six marinades to try this summer. They can all be frozen.

CHICKEN MARINADES
Marinate chicken between 2 to 12 hours before cooking.
Time: 10 minutes | Yield: 6

 

Lemon marinade with spices

  • 1 cup lemon juice
  • 2 tbsp. olive oil
  • 1 tsp. sumac
  • ½ tsp. oregano
  • ½ tsp. thyme
  • ½ tsp. 7-spice mix
  • ½ tsp. ginger powder
  • ¼ tsp. white pepper
  • 6 garlic cloves, crushed
  • 2 tbsp. fresh lemon thyme
  • Salt to taste

Marinade with yogurt and herbs

Marinade with yogurt and herbs

  • 1 bunch of fresh basil
  • 1 bunch of fresh coriander
  • 650 gr. plain yogurt
  • 8 garlic cloves
  • Salt to taste

Mix in the blender.

FISH & SEAFOOD MARINADES
Marinate about 15 to 30 minutes before cooking.
Time: 10 minutes | Yield: 6

 

Marinade with nuts and spices

Marinade with nuts and spices

  • 5 garlic cloves
  • Juice of 6 limes
  • ½ bunch of coriander
  • 3 tbsp. olive oil
  • 2 handfuls of walnuts
  • 1 tbsp. mix of boreal fish spices (we used spices from ORGN)
  • Salt to taste

Mix in the blender.

Coconut milk and basil marinade

Coconut milk and basil marinade

  • 250 ml coconut milk
  • Juice of 2 limes
  • ½ bunch of green basil
  • ½ bunch of red basil
  • 4 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tsp. turmeric
  • Salt to taste

Mix in the blender.

MEAT MARINADES
Marinate 2 to 24 hours before cooking.
Time: 10 minutes | Yield: 6

Marinade with mustard and red wine

  • 2 tbsp. Dijon mustard
  • 1 tbsp. old-fashioned mustard
  • 6 garlic cloves
  • ½ cup red wine
  • ¼ cup soy sauce
  • 3 tbsp. olive oil
  • 1 tsp. black pepper

 Mix in the blender.

Asian marinade

Asian marinade

  • ¼ cup soy sauce
  • 2 tbsp. sesame oil
  • 1 tbsp sesame seeds
  • 4 sliced green onions
  • 1 tbsp. fresh ginger
  • 6 garlic cloves
  • 1 tbsp. hoisin sauce

Mix in the blender, except the sesame seeds and onion. Add these 2ingredients to the mixture at the end.
