It's asparagus season!

Known to be rich in vitamins and antioxidants, asparagus are very tasty and can be prepared in many different ways. There are three  existe trois varieties of asparagus, the most common being the green asparagus.   

We’re proposing here a 2 for 1 :)
2 recipes, one single method of preparation 

Asparagus toast & asparagus salad

Time: 20 minutes | Yield: 2 people

Ingredients

  • 1 bunch of asparagus
  • 2 slices of country-style bread
  • Goat cheese
  • 3 tbsp. olive oil
  • 1 tsp. sumac
  • Juice of half a lemon
  • Zest of half a lemon
  • Sea salt

Asparagus toast & asparagus salad

Preparation

  1. Preheat the oven to 200 ° C
  2. Brush bread with 2 tbsp. olive oil and place in oven until lightly heated
  3. Remove from the oven and spread over a good layer of goat cheese
  4. Meanwhile, blanch the asparagus
  5. Heat the rest of the olive oil in a saucepan; add the asparagus and sauté for 1 minute. Add sea salt, sumac, lemon juice and zest, and cook for 1 to 2 minutes
  6. Remove from heat and add asparagus to bread

Do you want something fresh, with no bread? Well, the same recipe can be made as a salad.

Ingredients

  • 1 bunch asparagus
  • 398 ml hearts of palm, cut into slices
  • 300 g cherry tomatoes cut in 2
  • 1 tbsp. olive oil
  • 1 tsp. sumac
  • Juice of a lemon
  • Zest of half a lemon
  • Sea salt, to taste

Preparation

  1. Blanch the asparagus
  2. Meanwhile, cut cherry tomatoes, palm hearts and put them in a bowl
  3. Add the salt, half of the lemon juice and olive oil
  4. Heat the rest of the olive oil in a saucepan; add the asparagus and sauté for 1 minute. Add sea salt, sumac, the other half of the lemon juice and the zest, and cook for 1 to 2 minutes
  5. Remove from heat, cut asparagus in 2 or 3 and add to salad
